As a child, we didn't have a lot of money, so for the most part, my mom improvised on food and created cool and tasty meals on the cheap. One of my all time favorite cheap meals was the creation, Bologna Boats. What it is, is a piece of bologna fried in a skillet till it cups up, then you add mashed potatoes on top of it and finish it off with a slice of cheese. Simple, yet so yummy. Today before work, I made little Bub a boat for the first time and he seemed to like it. It is so great to be able to pass on things you loved as a child, to your own child. I remember the first time Dustin tried it out. We were down to bologna in the fridge pretty much and I made him a boat and he loved it. Who says eating cheap can't be yummy too?
