Nature Walk

One day we took a road less traveled for us and came across "The Nature Center". We had never seen it before, so we looked it up online and as it turned out, it is a learning place for kids and adults alkie to explore the great outdoors! How awesome can that get? So, we got ready, making sure to dress warm since it was cold out and I packed a goodie bag and off we went. There was a map in a gazeboo right off so we just took off along the trail. There's a big pond with a learning center and then different trails to go off on. It was very neat. A little "Blair Witch" scary, but fun none the less. Olivia and Noah both had fun running ahead of us and gathering rocks. It's funny, but as kids, Dustin and I both liked finding cool looking rocks, so I guess the kids are going to be the same way. I can't wait to explore this place when spring comes. It  was run kinda dead because of winter, but I bet it's beautiful come springtime!

That time again...

So, yes, it's that time again! Time to make Noah's birthday cards and plan his party! I have so many ideas, but I'm almost afraid that with school and everything, I might not be able to get it all done. I've been taking random pictures to see if I can get any good ones of Bub...






Noah is the silliest little guy ever. He can really make some faces. So, after all that, I used the picture he got taken at daycare. I'm so excited about his birthday!!!


His one year card came out great too!! :)

Road Trip

Daycare was closed on Monday, so we decided to take a road trip to the Dallas World Aquarium! It was a long trip for the kids, so they got a little nap in before we got there. They actually got a good nap because I missed the exit due to crazy Yahoo directions, but we finally found our turn.



I just love to see the BIG D!!


If you've never been to the Dallas World Aquarium, you should go. It is really awesome. You start at the top of the building and work your way down the levels. There's a waterfall that is the center attraction and goes into a big round pool that has all sorts of animails...even a manatee. In one of the pictures of the water, you can see the outline of it if you look close.






My favorite part of the aquarium is the underwater tunnel. It is a magical place. The kids were amazed by it. As an adult though, the only thing I could think of is how hot it was, how crowded it was, and how stinky it was. But, it's still one of the coolest things ever. The glow in the dark jelly fish (above) were also cool too! Wish I had been able to take pictures with my good camera. :(



Here's the top view of the pool. You can see the tunnel and the people in it too. See the huge sea turtle? Awesome. 



Bub and Pootie both had so much fun. They were tuckered out on our way home! :)

Famous Chicken Enchiladas

So, a coworker who left to be a travel nurse, gave me her "Famous" Enchilada recipe and let me tell you, I am now claiming it as my own (Sorry April, but I am giving you credit!). I have never tasted such an authentic red sauce. It makes my mouth water just thinking about it. So, here's the recipe. Please try it and enjoy!!!


Enchilada Filling:
4-5 boneless skinless chicken breasts (boiled and shreaded)
4-5 green onions (finely chopped)
3/4 cup sour cream
1/2 cup shreaded cheddar cheese
1/2 cup shreaded monterey jack cheese
1 small can of green chillies
1/4 cup chopped cilantro
1/2 cup sauce (see recipe below)

Sauce:
2 Tablespoons Corn Oil (You can use vegetable oil too, doesn't seem to affect the taste too much)
2 Tablespoons All purpose flour
1-8oz can tomato sauce
1-14 oz can chicken broth
2 Tablespoons Chilli Powder
1 Teaspoon Cumin
1 tsp Garlic Powder
1 tsp Salt
Dash of Pepper

Additional Ingredients:
24 ct corn tortillias
2-8 oz cans of chicken broth
3/4 cup chopped yellow onion
3 cups water
3-4 cups shredded montery jack/cheddar cheese

Boil your chicken breasts by bringing half water/half chicken broth to a boil. Add in 1/2 cup chopped onions. Boil chicken until done (DON'T OVER COOK THE CHICKEN...20 minutes should be enough). Cooking the breasts with chicken broth makes the chicken so much more flavorful.

Soften your corn tortillias in corn oil (or you can use butter).

In a sauce pan on high heat, add 2 Tablespoons corn oil
Once heated, add the flour. Stir for approx one minute. Turn heat down to Medium and add the chicken broth and whisk out any lumps. Add tomato sauce and spices. Simmer for approx five minutes.

After boiling your chicken and shreadding it, take the rest of the filling ingredients and mix together. Once mixed, add a small amount to a corn tortillia, roll up, and place in a cassarole dish seam side down. Repeat until dish is filled up. Take the remaining enchilada sauce and spread over the enchiladas evenly. Sprinkle with cheese. Cook on 425 for 10-15 minutes.
